White bean and tomato toasts

Who doesn't like to wake up a bit later during the weekend and have a delicious brunch? I have to say I'm a fan. However, I have been wanting to change my menu latetly.

We all had avocado toast and pancakes by now so I thought - why not have something different?

That's how this recipe was created. It's so simple and delicious, you will love it.




Ingredients for two big toasts:

  • 2 big slices of sourdough bread or 4 medium slices of ciabatta;

  • 300-350g jumbo white beans (or normal);

  • one medium onion - chopped;

  • 200g canned tomatoes;

  • 2 garlic cloves - minced;

  • herbs to taste - oregano, basil, whatever you like;

  • olive oil, sal and pepper to taste;

Topping:

  • mini mozarellas;

  • pesto;





Instructions:

1 - Start by chopping the onion and garlic and add them to a hot pan with olive oil;

2 - Once the onion starts to change color, add the canned tomatoes and a good pinch of salt and pepper. Let it simmer for 4-5 minutes, until the sauce starts to thicken.

3 - Next add the cooked beans and mix them well with the sauce. Let it simmer for another 3 minutes and add herbs to taste. Adjust for salt.

4 - Now let's assemble the toasts! I like to toast my bread on a pan with olive oil but do as you wish. Once the bread is ready, add the tomato and white beans sauce on top.

5 - To finish, add mini mozarellas on top and if you want them to melt, put the toasts in the oven for 5-6 minutos at 180C.

6 - I also added a bit of homemade pesto on top just to give it an extra quick! That's it :)
