Mediterranean salad

You know these days where you want something easy and quick, light but also bursting with flavour? That's how this recipe was born. There's something I love about mixing olives with tomates. It immediatly reminds of italian and mediterranean flavours.







Ingredients for two people:

  • 150g baby spinach

  • 1 block of halloumi cheese (around 200g)

  • 15 cherry tomatoes

  • 1 purple onion finely sliced

  • 2 slices of bread (naan, sourdouh, any thick bread will work) - roughly chopped

  • black olives to taste

  • olive oil to taste

  • 1 tbsp of apple cider vinegar

  • balsamic vinegar to taste

  • oregano to taste

Instructions:

  1. Start by slicing the onion and add it to a bowl with apple cider vinegar. Let it sit until all the ingredients are ready.

  2. If you have a grilling pan or a grill, awesome! If not, you can use a regular pan. Just add the cheese block and tomatoes without any oil and let them sit (turning as needed) until they have grilling marks.

  3. While the ingredients are grilling, you can start plating. Add first a layer of spinach. Next, add olives and onion (already marinated). After toasting the bread, slice it in small pieces and add it to the salad.

  4. Once the cheese is grilled, slice it in small pieces and add it to the salad. Finally, add the cherry tomatoes.

  5. Once all ingredients are plated, add olive oil, balsamic vinegar and oregano to taste. :)
